Health's No Joke with Artichokes

Although artichokes are most commonly used in dips, salads, and entrées, raw artichokes make for a tasty addition to green-smoothie recipes such as this one. Artichokes pack a protective punch against disease, inflammation, and bone loss.

INGREDIENTS | YIELDS 3-4 CUPS

  • 1 cup spinach
  • 4 artichoke hearts
  • 1 green onion
  • 2 celery stalks
  • 2 cups purified water
  1. Place spinach, artichokes, onion, celery, and 1 cup of water in a blender and blend until thoroughly combined.

  2. Add remaining 1 cup of water as needed while blending until desired consistency is achieved.
