Roasted Green Beans with Pine Nuts
Dress up your everyday green beans with toasted pine nuts, crispy prosciutto, and fresh sage.
INGREDIENTS | SERVES 6
Water, as needed to fill pot
2 pounds green beans, trimmed
Nonstick spray, as needed
2 ounces prosciutto or bacon, thinly sliced
2 teaspoons olive oil
4 cloves garlic, minced
2 teaspoons fresh sage, minced
¼ teaspoon salt
Fresh ground pepper, to taste
¼ cup pine nuts, toasted
1 teaspoon lemon zest
Boil water in a large pot. Add green beans to pot and simmer until tender-crisp, about 4 minutes. Drain green beans and set aside.
Spray a large pan with cooking spray and place over medium heat. Add prosciutto and cook, stirring, until crisp. Transfer prosciutto to a paper towel to blot excess oil.
Add 2 teaspoons oil to the large pan and return to medium heat. Add green beans, garlic, sage, half of the salt, and pepper to the pan. Cook until the green beans begin to slightly brown.
Add in the pine nuts, lemon zest, and prosciutto; season with remaining salt and additional pepper.
