Warm Red Cabbage with Goat Cheese and Bacon

With so many dominant flavors, this delicious side can even stand on its own as a lunch.

INGREDIENTS | SERVES 6

1 head red cabbage

¼ pound bacon, chopped

2 tablespoons olive oil

3 tablespoons balsamic vinegar

2 cloves garlic, minced

¼ teaspoon pepper

5 ounces goat cheese

  • Slice cabbage head in half, remove the core, and chop into small pieces.

  • In a large pan over medium-high heat, cook bacon pieces until browned and crisp. Drain excess oil from the pan. Place cabbage into pan with bacon.

  • Add oil, vinegar, garlic, and pepper to the cabbage. Cover, reduce heat to low, and simmer for 10 minutes, until tender.

  • Toss cabbage with goat cheese and serve.
