Warm Red Cabbage with Goat Cheese and Bacon
With so many dominant flavors, this delicious side can even stand on its own as a lunch.
INGREDIENTS | SERVES 6
1 head red cabbage
¼ pound bacon, chopped
2 tablespoons olive oil
3 tablespoons balsamic vinegar
2 cloves garlic, minced
¼ teaspoon pepper
5 ounces goat cheese
Slice cabbage head in half, remove the core, and chop into small pieces.
In a large pan over medium-high heat, cook bacon pieces until browned and crisp. Drain excess oil from the pan. Place cabbage into pan with bacon.
Add oil, vinegar, garlic, and pepper to the cabbage. Cover, reduce heat to low, and simmer for 10 minutes, until tender.
Toss cabbage with goat cheese and serve.
