Twice-Baked Sweet Potatoes

These sweet potatoes are not just for holidays; they should be enjoyed year-round.

INGREDIENTS | SERVES 4

  • 4 sweet potatoes
  • 2 tablespoons butter, softened
  • 3 ounces low-fat cream cheese
  • 1 tablespoon agave nectar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ginger
  1. Preheat oven to 375°F.

  2. Wash sweet potatoes and then place on a baking sheet. Bake for 1 hour. Allow potatoes to cool. Slice potatoes in half lengthwise and scoop out inside flesh into a mixing bowl. Keep potato skins intact.

  3. In a second mixing bowl, combine butter, cream cheese, agave nectar, and spices. Add the cream cheese mixture to the sweet potato and mash to blend well.

  4. Fill the potato skins with the sweet potato mash and place on a baking sheet. Place in the oven to bake for 15 minutes.
