Sautéed Polenta Patties with Italian Tuna

Try this for lunch on a hot day or supper on a warm night.

INGREDIENTS | SERVES 4

1 recipe Basic Polenta with Butter and Cheese (see Chapter 8)

Nonstick spray, as needed

1 pound green beans

¼ cup mayonnaise

Juice of 1 lemon

¼ cup olive oil

2 cans tuna, drained (imported Italian tuna if you can find it)

Salt and pepper, to taste

  • Chill polenta in an 8″ × 10″ glass pan that you have prepared with nonstick spray. Cool the polenta until very firm, at least 3 hours in the refrigerator.

  • Blanch the green beans and shock. Drain and reserve. Mix the mayonnaise and lemon juice in a small bowl.

  • Cut four 3″ polenta patties out of the pan and sauté in olive oil over medium heat. Place on individual serving plates. Add tuna and green beans. Add salt and pepper to taste.

  • Drizzle with the lemon-mayonnaise mixture and serve.

TIP: Substitute low-fat mayonnaise for regular mayonnaise.
