NO DEFROSTING NEEDED!
INGREDIENTS | SERVES 20
- 2 (16-ounce) cans refried beans
- 2 (10-ounce) cans enchilada sauce
- 20 flour tortillas
- 2 cups shredded Cheddar cheese
In a large bowl, combine refried beans with enchilada sauce. Mix well.
Spread 3 tablespoons of bean mixture down the center of each tortilla, and sprinkle Cheddar cheese on top.
Fold the burritos by first folding the bottom of the tortilla about ⅓ of the way up. Next fold the right side of the tortilla over the filling, then fold the left side of the tortilla so it overlaps the right side.
Flash freeze on a baking sheet, folded side down. Once frozen, transfer the burritos to a freezer bag.
Microwave frozen burrito for 1 minute, turn over, and microwave an additional minute.
