Broiled Japanese Knotweed

Easy-to-prepare side dish that can be served alone or with other vegetables.

INGREDIENTS | SERVES 6–8

10–12 Japanese knotweed spears, about 6 inches in length

1 tablespoon butter for greasing baking dish

1 teaspoon Wild Herb Seasoning (Chapter 18)

2 tablespoons butter, melted

1. Preheat oven to 350°F.

2. Arrange knotweed spears on bottom of buttered baking dish.

3. Mix herb seasoning with melted butter. Dribble over knotweed spears.

4. Bake for 10 minutes.
