Nettle is one of the best sources of protein in the plant world. It is also rich in iron, calcium, magnesium, zinc, and other vitamins and minerals.
INGREDIENTS | SERVES 6–8
2 cups fresh stinging nettle (can also use chickweed, cress, or garlic mustard)
¼ cup fresh parsley
2 cloves garlic
1 cup toasted pecans
½ teaspoon salt
¼ cup olive oil
½ cup grated Parmesan cheese
1. Process all ingredients in food processor until a smooth paste is formed.
2. Serve on crackers, bread, or with pasta.
