Like a quiche but without a crust. Use the Ground Cherry Salsa (Chapter 16) as a spread on top.
INGREDIENTS | SERVES 4
2 tablespoons butter
1 onion, diced
3 eggs, beaten
1 cup sour cream
2 cups lambsquarters, chopped
1 teaspoon Wild Herb Seasoning (Chapter 18)
1 cup whole wheat flour
2 teaspoons baking powder
1 cup Cheddar cheese, grated
1. Preheat oven to 350°F.
2. Melt butter in a saucepan. Sauté onions about 5 minutes until translucent.
3. Add eggs and sour cream to a blender and mix well. Add lambsquarters and herb seasoning and blend until greens are coarsely chopped.
4. In medium bowl, combine egg mixture with flour and baking powder. Mix well.
5. Stir in sautéed onions and grated cheese. Pour into buttered pie pan and bake for 35 minutes, or until firm.
