Passionfruit Bars

A dessert with the tartness of lemons. Use a berry sauce as a topping.

INGREDIENTS | SERVES 12

⅓ cup butter

¾ cup honey

2 eggs

1½ cups flour

1 teaspoon baking powder

2 cups passionfruit juice

1. Preheat oven to 350°F.

2. In a large mixing bowl, blend butter and honey.

3. Beat in eggs one at a time.

4. Add flour and baking powder. Stir in passionfruit juice.

5. Pour into a medium-size baking dish and bake for 35–40 minutes.
