Hickory Bites

These high-protein bites are good to take with you when hiking or doing outside activities for quick bursts of energy.

INGREDIENTS | MAKES 7 DOZEN

⅔ cup butter, softened

⅔ cup raw sugar

¼ cup honey

2 eggs

⅔ cup chopped hickory nuts

2 cups oats

2 cups flour

1 teaspoon baking soda

⅔ cup wild blueberries

⅔ cup hickory nut milk

1. Preheat oven to 350°F.

2. In a large mixing bowl, cream butter, sugar, and honey.

3. Add remaining ingredients and mix thoroughly.

4. Drop by teaspoonfuls onto baking dish.

5. Bake for 12 minutes.

Freezing Tips

When making a large quantity of cookies, freeze what you don't need now by arranging the cooled cookies in a plastic container lined with plastic wrap, placing the wrap between the layers. When ready to use, thaw and heat in oven to desired temperature.
