Berry Cheesecake
So yummy you will want to go out and gather lots of berries.
INGREDIENTS | SERVES 8
8 ounces cream cheese, softened
½ cup plain yogurt
¼ cup honey
1 granola or graham cracker crust
1 cup blueberries, blackberries, or raspberries, sweetened with honey
1 tablespoon corn starch
¼ cup water
1. Mix cream cheese, yogurt, and honey and spread onto crust.
2. Drain liquids from berries. Spread berries on top of cream cheese mixture.
3. Add water and corn starch to drained liquid and cook on medium heat until mixture begins to boil, stirring constantly, for 1 minute, or until clear.
4. Spoon glaze over berries. Chill at least 30 minutes and serve.
