Acorn Chip Cookie Bars
A high-protein cookie to serve with hot, mulled apple cider with rose hips.
INGREDIENTS | MAKES 16 SQUARES
¼ cup butter, softened
¼ cup molasses
2 tablespoons honey
¼ cup plain yogurt
¼ cup cream cheese
½ teaspoon vanilla
1 cup acorns, finely chopped
1 cup whole wheat flour
1 teaspoon baking powder
1. Preheat oven to 350°F.
2. Cream together butter, molasses, and honey.
3. Blend yogurt, cream cheese, and vanilla and add to butter mixture.
4. Stir in remaining ingredients.
5. Spread in 8-inch square baking dish.
6. Bake for 25–30 minutes.
7. Cool 10–15 minutes, cut into squares and serve.
