Persimmon Bread

This is a sweet bread that is good with a fruit and nut cheese spread and served with hot cider.

INGREDIENTS | SERVES 6

2 eggs, beaten

¼ cup vegetable oil or butter, softened

⅔ cup honey

2 tablespoons plain yogurt

2 cups flour

1 teaspoon baking powder

1 cup persimmon pulp

½ cup chopped nuts (optional)

1. Preheat oven to 350°F.

2. Combine ingredients in the order listed. Mix well.

3. Pour into a greased loaf pan.

4. Bake 45–50 minutes.

5. Cool 10–15 minutes before removing from pan.
