These are good with soups or salads and can be eaten hot or cold.
INGREDIENTS | SERVES 4–6
¾ cup sour cream (or milk)
2 eggs, beaten
1½ cups pancake mix
1¼ cups wild greens
3 wild onions (or green onions)
1 cup Cheddar cheese, grated Oil or butter for frying
1. In a large bowl, combine sour cream with eggs.
2. Add pancake mix, wild greens, onions, and cheese.
3. Drop by spoonfuls onto hot, oiled griddle or frying pan and cook on each side 5–10 minutes, until brown.
