Acorn Griddle Cakes
A fulfilling way to start the day with griddle cakes served with real maple syrup.
INGREDIENTS | SERVES 12
2 cups acorn meal
2 cups flour or pancake mix
1 cup maple-flavored yogurt
½ cup water or enough for pancake consistency
¼ cup butter or vegetable oil for frying
1. Combine ingredients and mix until well blended.
2. Drop by spoonfuls onto hot, oiled griddle pan.
3. Brown 5–10 minutes on each side or until brown and serve.
