Pine Needle Tea
A drink high in vitamin C that is available year-round. Spruce needles can be used as well.
INGREDIENTS | SERVES 4
3–5 clusters of pine needles
1 quart boiling water
Juice of 1 lemon
Maple syrup, to taste
Make It Medicinal
The longer you steep pine needle tea, the stronger it becomes, making it more of a medicine than a tea. Drink the tea as a cold or flu remedy or to boost the immune system.
1. Using kitchen scissors, snip needles into 1 to 2-inch-long pieces.
2. Pour boiling water over needles. Add lemon juice.
3. Cover and let steep 5 minutes.
4. Sweeten to taste with maple syrup and serve.
