Cherry French Toast
This special breakfast uses both tart cherry juice and tart cherries. Blueberries make the perfect substitute or addition if you have them on hand.
INGREDIENTS | SERVES 4
- ½ cup tart cherries, pitted and chopped
- 1 tablespoon demerara sugar
- 1 egg, beaten
- ½ teaspoon vanilla
- 2 tablespoons tart cherry juice
- 4 slices whole-grain bread
- 1 tablespoon butter
- 4 tablespoons pecans, chopped
In a small saucepan, combine the cherries, sugar, and 1 tablespoon of water. Simmer on medium-high heat 5 to 7 minutes, until the cherries break down and the juice thickens. Set aside.
Combine the egg, vanilla, and cherry juice in a shallow baking dish. Arrange each slice of bread in the dish. Flip to coat evenly and allow to sit for 2 to 3 minutes.
Melt the butter in a skillet. Cook the bread slices for about 3 minutes on each side or until nicely browned.
Put each slice on a plate; top with ¼ of the cherry syrup and pecans. Serve warm.

Cherry Berry Juice Cocktail
This recipe combines fresh fruit and fruit juices for a nonalcoholic drink that is similar to sangria. Serve it over ice and garnish with a leaf of mint. Be sure to eat the delicious fruit when your drink is gone!
INGREDIENTS | SERVES 8
- 1 cup red seedless grapes, halved
- ½ cup fresh blackberries
- ½ cup fresh blueberries
- 1 red plum, sliced
- 2 cups tart cherry juice
- 2 cups 100% cranberry juice
- 1 liter club soda
In a large pitcher or punch bowl, combine all of the fruit.
Pour in the cherry juice, cranberry juice, and club soda. Stir well and ladle both juice and fruit into each glass over ice. Serve cold.

Make It Sangria
You can turn this recipe into a sangria using wine if you like. One option is to replace the club soda with a bottle of sweet red or rosé wine. If you prefer more of a sangria spritzer, use 1 bottle of the wine, half the club soda, and 1 cup of each of the juices.
