Sparkly Carrots
Use your favorite clear carbonated soda in this easy recipe. It adds a slightly sweet crispness to this side dish.
INGREDIENTS | SERVES 4
- 1 tablespoon olive oil
- 2 shallots, minced
- 2 cups baby carrots
- ½ cup gluten-free lime carbonated soda
- ¼ teaspoon salt
- ⅛ teaspoon pepper
In large skillet, heat olive oil over medium heat. Add shallots; cook and stir until crisp-tender, about 2 minutes.
Add carrots; cook and stir 2–3 minutes.
Add soda, salt, and pepper to skillet and bring to a boil. Reduce heat, cover, and simmer 4–5 minutes, or until carrots are tender. Serve immediately.

Baby Carrots
