Sparkly Carrots

Use your favorite clear carbonated soda in this easy recipe. It adds a slightly sweet crispness to this side dish.

INGREDIENTS | SERVES 4

  • 1 tablespoon olive oil
  • 2 shallots, minced
  • 2 cups baby carrots
  • ½ cup gluten-free lime carbonated soda
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  1. In large skillet, heat olive oil over medium heat. Add shallots; cook and stir until crisp-tender, about 2 minutes.

  2. Add carrots; cook and stir 2–3 minutes.

  3. Add soda, salt, and pepper to skillet and bring to a boil. Reduce heat, cover, and simmer 4–5 minutes, or until carrots are tender. Serve immediately.

Baby Carrots

Baby carrots aren't just ordinary carrots cut down to size. Ordinary carrots have a clear orange center that isn't as sweet as the rest of the carrot. If made from regular carrots, baby carrots would consist of mostly the center. They are made from a special variety of carrot that is cut down to the baby carrot size. They're delicious eaten cooked or raw.
