Hash Brown Casserole
This recipe makes a huge amount, so it's perfect for entertaining or holidays.
INGREDIENTS | SERVES 8–10
- 1 (32-ounce) package frozen hash brown potatoes, thawed
- 1 onion, minced
- 2 cloves garlic, minced
- 1 teaspoon salt
- ¼ teaspoon white pepper
- 1 cup Soy-Yogurt Cheese
- ⅓ cup soy or rice milk
- 2 cups shredded nondairy, vegan mozzarella cheese
Preheat oven to 375ºF. Spray a 13″ × 9″ baking dish with nonstick gluten-free cooking spray and set aside.
In large bowl, combine all ingredients and mix well. Spoon into baking dish and spread into an even layer.
Cover and bake 30 minutes, then uncover and bake 30–40 minutes longer, or until casserole is bubbly and starting to brown. Serve immediately.

Hash Brown Potatoes
You can find hash brown potatoes in the refrigerated and freezer sections of your local grocery store. Read labels to learn which one has the fewest additives and other ingredients. To thaw the frozen potatoes, just let the bag stand in the refrigerator overnight. Drain the potatoes well before using in recipes.
