Apricot Glazed Beans
Green beans are often served plain; this recipe is a nice change of pace. It's a good side dish to serve with simple broiled chicken or pork chops.
INGREDIENTS | SERVES 4
- 1 pound green beans
- 1 tablespoon olive oil
- 1 shallot, minced
- ¼ cup apricot nectar
- ⅓ cup gluten-free apricot preserves
- 2 teaspoons fresh chopped rosemary leaves
- ¼ teaspoon salt
- Pinch white pepper
Cook beans in a steamer until crisp-tender, about 4–5 minutes. Drain and set aside.
In large saucepan, heat olive oil over medium heat. Add shallot; cook and stir until crisp-tender, about 4 minutes.
Add apricot nectar and beans; bring to a simmer. Cover pan and simmer 3–4 minutes, until beans are tender.
Uncover and add preserves, rosemary, salt, and pepper. Cook and stir 1–2 minutes, until beans are glazed.
