Apricot Glazed Beans

Green beans are often served plain; this recipe is a nice change of pace. It's a good side dish to serve with simple broiled chicken or pork chops.

INGREDIENTS | SERVES 4

  • 1 pound green beans
  • 1 tablespoon olive oil
  • 1 shallot, minced
  • ¼ cup apricot nectar
  • ⅓ cup gluten-free apricot preserves
  • 2 teaspoons fresh chopped rosemary leaves
  • ¼ teaspoon salt
  • Pinch white pepper
  1. Cook beans in a steamer until crisp-tender, about 4–5 minutes. Drain and set aside.

  2. In large saucepan, heat olive oil over medium heat. Add shallot; cook and stir until crisp-tender, about 4 minutes.

  3. Add apricot nectar and beans; bring to a simmer. Cover pan and simmer 3–4 minutes, until beans are tender.

  4. Uncover and add preserves, rosemary, salt, and pepper. Cook and stir 1–2 minutes, until beans are glazed.
