Grilled Cheese Sandwiches

Grilled cheese sandwiches are an American classic. You can make this with real American cheese and butter if you aren't allergic to dairy.

INGREDIENTS | SERVES 6

  • 1 recipe Focaccia Bread
  • 12 slices vegan, soy American cheese, diced
  • 6 slices tomato
  • 2 tablespoons dairy-free vegan margarine
  • 1 tablespoon extra-virgin olive oil
  1. Slice Focaccia into 6 wedges. Carefully slice each wedge in half, making 12 thinner wedges. Make sandwiches using the cheese and tomato.

  2. In small bowl, combine margarine and oil; beat to combine. Spread this mixture on outside of Focaccia.

  3. Heat a griddle over medium-low heat.

  4. Add sandwiches and cook, turning once and pressing down with spatula occasionally, until bread is toasted and cheese is melted, about 5–6 minutes. Serve immediately.

Soy Cheese Varieties

You may have to try several varieties of soy cheese before you find one you like. The cheese works best when it's used as “glue” in a recipe, as in the Grilled Cheese Sandwiches or Pizza Wraps; it also melts better when diced or shredded. Some good brands include Soymage, Vegan Gourmet, Sheese, and Galaxy Nutritional Foods Vegan Soy.
