Italian Salad Dressing

You can find garlic paste in a tube at health food stores and online. It's a good way to get garlic flavoring throughout a dish without little bits of the vegetable.

INGREDIENTS | YIELDS ½ cup; Serving size 2 tablespoons

  • ¼ cup extra-virgin olive oil
  • 2 tablespoons gluten-free balsamic vinegar
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic paste
  • 1 teaspoon dried basil leaves
  • ½ teaspoon dried oregano leaves
  • 2 teaspoons dried parsley flakes
  • ¼ teaspoon salt
  • ⅛ teaspoon white pepper
  1. In small bowl, combine olive oil, vinegars, and garlic paste and whisk to blend and distribute garlic paste evenly.

  2. Add remaining ingredients and whisk to blend. Store covered in refrigerator up to 4 days.

Is Balsamic Vinegar Gluten-Free?

Not all balsamic vinegar is gluten-free. This vinegar gets its deep color and rich flavor from long aging in oak casks. The more inexpensive varieties may get that deep color from caramel coloring or other additives, which can contain gluten. To be safe, buy the most expensive balsamic vinegar you can afford, and be sure the ingredient label has only one ingredient: vinegar.
