Creamy Fruit Salad
This salad is almost a dessert! It's creamy, sweet, and tart, with the best flavor. The kids will love it.
INGREDIENTS | SERVES 6
- 1 (4-ounce) package lemon crème soy-blend pudding mix
- 1 (12-ounce) container silken tofu
- 1 cup nondairy vegan whipped topping
- ½ teaspoon grated lemon zest
- 2 cups red grapes
- 1 cup green grapes
- 2 bananas, sliced
- 1 tablespoon lemon juice
- 2 cups sliced strawberries
In blender or food processor, combine pudding mix and silken tofu; blend or process until smooth and creamy.
Pour into serving bowl; fold in whipped topping and lemon zest.
Add grapes. Slice bananas, sprinkling with lemon juice as you work. Fold all fruit into pudding mixture.
Cover and chill 2–3 hours before serving.

Pudding Mixes
There are some pudding mixes which are specifically formulated to use silken tofu, soy milk, or rice milk. Mori-Nu has one brand that comes in several flavors. Many pudding mixes, especially the instant type, will not thicken when mixed with soy or rice milk. The same is true with pudding recipes. Use a recipe specially formulated for soy or rice milk.
