Creamy Raspberry Sorbet
For this recipe, you do need an ice-cream maker for best results. This creamy sorbet is rich and delicious.
INGREDIENTS | SERVES 6
- 1 cup sugar
- 1 cup water
- 1 cup coconut milk
- 2 cups fresh raspberries
- 2 cups frozen raspberries
- ⅛ teaspoon salt
- 2 tablespoons orange juice
In heavy saucepan, combine sugar and water and bring to a boil. Boil until sugar dissolves completely, about 1 minute. Remove from heat and let cool completely.
In food processor, combine sugar mixture, coconut milk, fresh and frozen raspberries, salt, and orange juice. Process until smooth.
Cover and refrigerate until very cold, about 3–4 hours. Freeze according to your ice-cream maker's instructions.
