Cherries Jubilee Crepes

This festive dessert can be made without the cream cheese for a dairy-free treat.

INGREDIENTS | SERVES 6

  • 1 (15-ounce) can gluten-free dark sweet cherries
  • 2 tablespoons cornstarch or potato-starch flour
  • ½ cup sugar
  • ⅓ cup orange juice
  • 1 teaspoon vanilla
  • 8 Gluten-Free Sweet Crepes
  • 1 (3-ounce) package dairy-free, vegan cream cheese, softened
  1. Preheat oven to 350ºF. Make sure that all of the cherries have pits removed. Drain cherries, reserving juice; set aside.

  2. In medium saucepan, combine ⅓ cup reserved cherry juice, cornstarch or potato-starch flour, sugar, and orange juice; mix well with wire whisk. Place over medium heat and cook, stirring constantly, until mixture thickens and becomes clear.

  3. Remove from heat and stir-in cherries and vanilla. Let stand 10 minutes; remove the cherries from the sauce using a slotted spoon.

  4. Arrange Crepes on work surface and carefully spread each with some cream cheese. Top with the cherries and roll up. Place in prepared baking dish, seam-side down. Bake 7–9 minutes, or until heated through.

  5. While crepes are baking, reheat sauce over medium heat. When crepes are hot, remove from oven, place on serving platter, and pour hot sauce over all. Serve immediately.

Flaming Desserts!

If you'd like to flame this dessert, add ¼ cup brandy to the cherry sauce with the cherries and vanilla. When the sauce has been heated and poured over the hot crepes, ignite the sauce using a long lighter. Be careful, and stand back! The flame will burn itself out, then you can serve the crepes.
