Caramel Sauce

Caramel sauce can be drizzled over sorbet or other frozen desserts, spice cake, or fresh fruit.

INGREDIENTS | YIELDS 1 cup; Serving size 2 tablespoons

  • ½ cup dark brown sugar
  • ½ cup light brown sugar
  • ½ cup dairy-free, vegan coffee creamer
  • ¼ cup rice or soy milk
  • 2 tablespoons dairy-free, vegan margarine
  • ⅛ teaspoon salt
  1. In heavy, medium saucepan, combine sugars, coffee creamer, and rice or soy milk; mix well with spoon.

  2. Cook over medium heat until it comes to a boil. Then boil 3 minutes, stirring frequently. Remove from heat and add margarine and salt.

  3. Let cool at least 1 hour before serving. Store leftovers in refrigerator up to 1 week.

Coffee Creamer

Remember, “nondairy” does not mean that there is no milk protein in a product. The best way to ensure that your coffee (or recipes) are dairy free is to look for the words “vegan” or “contains no dairy.” Vegan coffee creamers are a good substitute for milk or cream in many baking and cooking recipes.
