Banana-Split Parfait
Now this is quite a dessert! If you love banana splits, this is one recipe you'll make often.
INGREDIENTS | SERVES 6
- 3 bananas
- 2 tablespoons lemon juice
- 1 tablespoon honey
- ½ teaspoon cinnamon
- 12 Chocolate-Cherry Meringue Cookies
- 2 cups Strawberry Sorbet
- ½ cup Chocolate Sauce
Peel bananas; slice ½″ thick.
In medium bowl, combine lemon juice, honey, and cinnamon and mix well. Toss bananas in mixture.
Crumble the Meringues.
In each of six parfait glasses, layer bananas, crumbled Meringues, Strawberry Sorbet, and Chocolate Sauce.
Serve immediately, or store in freezer up to 6 hours.

Parfaits
Parfaits are great last-minute desserts, and can be made with many ingredients. Layer fruit with vegan whipped topping and add some chocolate chips. Crumble some cookies and layer with frozen tofutti and toasted coconut. You can drizzle the layers with chocolate, caramel, or marshmallow sauce; you get the idea!
