No-Bake Honey Balls

These sweet and chewy no-bake cookies are a good choice for beginning cooks.

INGREDIENTS | YIELDS 30 cookies

  • ½ cup honey
  • ½ cup gluten-free golden raisins
  • ½ cup gluten-free dry milk powder
  • 1 cup crushed crisp rice cereal
  • ¼ cup gluten-free powdered sugar
  • 1 cup finely chopped dates
  • 1 cup crushed crisp rice cereal
  1. In food processor, combine honey and raisins; process until smooth.

  2. Scrape into a small bowl and add milk powder, 1 cup crushed cereal, powdered sugar, and dates; mix well. You may need to add more powdered sugar or honey for desired consistency.

  3. Form mixture into ¾″ balls and roll in remaining crushed cereal. Store tightly covered at room temperature.

Dates

Do not buy the precut dates that have been coated in sugar for most recipes. They are too dry and too sweet and will upset the balance of most recipes. To chop dates, use scissors occasionally dipped into very hot water. If you can find them, Medjool dates, usually found in health food and gourmet stores, are richer than Deglet Noor dates.
