Fudge Frosting

Lyle's Golden Syrup is an English product you can find in large grocery stores or online. It's similar to corn syrup, but is gluten, fish, and gelatin free with Kosher Certification.

INGREDIENTS | YIELDS 2 cups; Serving size ¼ cup

  • ⅓ cup extra-virgin coconut oil
  • 3 tablespoons Lyle's Golden Syrup
  • 2 (1-ounce) squares gluten-free unsweetened chocolate, chopped
  • 1 (1-ounce) square gluten-free semisweet chocolate, chopped
  • 4 cups gluten-free powdered sugar
  • Pinch salt
  • 1 teaspoon gluten-free vanilla
  • ¼ cup rice milk
  1. In large microwave-safe bowl, combine coconut oil, Golden Syrup, and chocolates. Melt on 50 percent power 2 minutes; remove and stir. Repeat process, microwaving for 1 minute intervals, until mixture is melted and smooth.

  2. Beat in 2 cups of the powdered sugar, the salt, and vanilla until smooth. Then alternately add the rest of the powdered sugar along with the rice milk, beating until fluffy. You may need to add more sugar or rice milk to get desired consistency. Fills and frosts 2 8″ cake layers.
