Chocolate-Cherry Meringue Cookies

These chewy and crunchy cookies taste like chocolate covered cherries, but they're better!

INGREDIENTS | YIELDS 24 cookies

  • 3 egg whites
  • ⅛ teaspoon cream of tartar
  • ⅛ teaspoon salt
  • ½ cup sugar
  • ¼ cup gluten-free powdered sugar
  • ¼ teaspoon gluten-free cherry extract
  • ¼ cup gluten-free cocoa powder
  • ½ cup gluten-free hard cherry-flavored candies, finely crushed
  • ½ cup gluten-free semisweet chocolate chunks
  1. Preheat oven to 350ºF. Line a cookie sheet with parchment paper and set aside.

  2. In large bowl, beat egg whites, cream of tartar, and salt until soft peaks form. Gradually add sugar, beating until stiff.

  3. Beat-in powdered sugar, cherry extract, and cocoa powder until well blended.

  4. Fold-in crushed candies and chocolate chunks.

  5. Drop by tablespoons onto prepared cookie sheet.

  6. Bake 25–30 minutes, or until cookies are dry to the touch. Let cool 5 minutes, then carefully peel off paper; cool completely on wire rack. Store covered at room temperature.
