Cinnamon French Toast

Purchased gluten-free bread can be dense and rather stiff; perfect for making the best French Toast.

INGREDIENTS | SERVES 4–6

  • ¼ cup orange juice
  • ¼ cup rice milk
  • 1 ripe banana
  • 2 tablespoons sugar
  • ½ teaspoon cinnamon
  • ⅛ teaspoon cardamom
  • 1 teaspoon gluten-free vanilla
  • ¼ teaspoon salt
  • 6 slices day-old gluten-free, dairy-free bread
  • 1 tablespoon vegetable oil
  1. In food processor or blender, combine orange juice, rice milk, and banana and blend until smooth.

  2. Pour into a shallow bowl and stir in sugar, cinnamon, cardamom, vanilla, and salt; mix well.

  3. Soak bread in mixture for 2–3 minutes. Heat vegetable oil in a large skillet over medium heat.

  4. Cook bread in skillet, turning once, until golden brown on both sides and slightly puffy, about 4–6 minutes. Serve immediately.
