Cinnamon French Toast
Purchased gluten-free bread can be dense and rather stiff; perfect for making the best French Toast.
INGREDIENTS | SERVES 4–6
- ¼ cup orange juice
- ¼ cup rice milk
- 1 ripe banana
- 2 tablespoons sugar
- ½ teaspoon cinnamon
- ⅛ teaspoon cardamom
- 1 teaspoon gluten-free vanilla
- ¼ teaspoon salt
- 6 slices day-old gluten-free, dairy-free bread
- 1 tablespoon vegetable oil
In food processor or blender, combine orange juice, rice milk, and banana and blend until smooth.
Pour into a shallow bowl and stir in sugar, cinnamon, cardamom, vanilla, and salt; mix well.
Soak bread in mixture for 2–3 minutes. Heat vegetable oil in a large skillet over medium heat.
Cook bread in skillet, turning once, until golden brown on both sides and slightly puffy, about 4–6 minutes. Serve immediately.
