Cherry Coffee Cake
This coffee cake is for a special occasion. Make it for Christmas morning breakfast or brunch.

- ¼ cup dairy-free vegan margarine
- 2 tablespoons vegetable oil
- ¼ cup applesauce
- ½ cup sugar
- ½ cup brown sugar
- 2 eggs
- 1 teaspoon gluten-free vanilla
- 1 cup superfine rice flour
- ½ cup white sorghum flour
- ½ cup millet flour
- 1 teaspoon xanthan gum
- 1 teaspoon gluten-free baking powder
- 1 teaspoon cinnamon
- 1 (21-ounce) can gluten-free cherry pie filling
- ¼ cup dairy-free vegan margarine
- ½ cup brown sugar
- ½ teaspoon cinnamon
- 1 cup gluten-free oatmeal
Preheat oven to 350°F. Spray a 9″ × 13″ pan with nonstick gluten-free cooking spray and set aside.
In large bowl, combine ½ cup margarine, oil, applesauce, sugar, and ½ cup brown sugar; beat until smooth. Add eggs and vanilla and beat again until smooth.
In medium bowl, combine rice flour, sorghum flour, millet flour, xanthan gum, baking powder, and 1 teaspoon cinnamon; mix well. Add to egg mixture and beat just until combined. Spread evenly in prepared pan and top with cherry-pie filling.
In small bowl, combine ¼ cup margarine, ½ cup brown sugar, ½ teaspoon cinnamon, and oatmeal; mix until crumbly. Sprinkle over pie filling.
Bake 45–55 minutes, or until it is deep golden brown and starts to pull away from sides of pan. Let cool for 30 minutes, then serve.

Many celiacs and others who avoid gluten have had reactions to oatmeal, because it is processed in the same plants used to mill wheat. You can find gluten-free oatmeal from a plant that has a dedicated mill, with oats grown in dedicated fields — one that only produces oats, like Bob's Red Mill and Cream Hill Estates. McCann's uses dedicated mills, but doesn't have a guaranteed supply chain from the farms.
