Parsnip Soup

Fruit dippers aren't only for dessert fondues. Sweet pears and savory vegetables make an interesting combination in this dish.

INGREDIENTS | SERVES 4

  • 4 pears
  • ¾ teaspoon curry powder
  • 4 parsnips
  • ¼ teaspoon salt
  • ½ yellow onion
  • Pepper to taste
  • 1 garlic clove
  • 2 tablespoons parsley, chopped
  • 4 cups Vegetable Broth
  1. Wash the pears, remove the stems, and cut into bite-sized pieces. Wash and peel the parsnips. Cut diagonally into ½-inch pieces. Peel and chop the onion. Smash, peel, and chop the garlic clove.

  2. Heat the broth in the fondue pot over a stove element. Add the parsnips, onion, garlic, curry powder, salt, and pepper to the broth. Simmer for at least 15 minutes, or until parsnips are tender. Stir in the parsley.

  3. Transfer the fondue pot to the table and set up the burner. Use dipping forks to spear the pears and dip into the soup.
