Oriental Vegetable Salad with Mediterranean Dressing
Balsamic vinegar's tart flavor nicely complements Oriental vegetables. Feel free to substitute baby corn for the bamboo shoots.
INGREDIENTS | SERVES 4
- 1 8-ounce can bamboo shoots
- ½ teaspoon sugar
- 1 red pepper
- Fresh ground black pepper to taste
- 1 garlic clove
- 2 tablespoons olive oil
- Parsley sprigs
- 1 tablespoon balsamic vinegar
Rinse the bamboo shoots in warm running water and drain thoroughly.
Remove the stem and seeds from the red pepper and cut into thin strips.
Smash, peel, and mince the garlic.
Place the vegetables in a bowl.
Combine the olive oil, balsamic vinegar, sugar, and black pepper. Toss with the vegetables. Garnish with the parsley.
