Vietnamese Beef Broth

Use with Vietnamese Beef Hot Pot or to add flavor to beef or vegetable fondues. Nonalcoholic red wine can be used in place of the red wine.

INGREDIENTS | YIELDS 6 cups

  • 2 garlic cloves
  • 3 slices ginger
  • 2 green onions
  • 3 teaspoons hot chili sauce
  • 5 cups beef broth
  • 4½ teaspoons fish sauce
  • 1 cup red wine
  1. Smash and peel the garlic and roughly chop the green onions.

  2. Combine all the ingredients in large saucepan and bring to a boil.

  3. Transfer enough broth to fill the fondue pot about ⅔ full.

  4. Set the fondue pot on the burner, with enough heat to keep the broth simmering throughout the meal. Keep the remaining broth warm on the stove to use as needed.
