Sweet and Sour Marinade

This is an excellent marinade to use with 1–1½ pounds of cubed pork or chicken.

INGREDIENTS | YIELDS ½ cup

  • 2 tablespoons vegetable oil
  • 4 teaspoons brown sugar
  • 4 tablespoons rice vinegar
  • 1 teaspoon ginger, chopped
  • 1½ teaspoons light soy sauce

Combine all the ingredients. Place the meat in a shallow glass dish, toss with the marinade, and refrigerate for at least 1 hour.

Draining Marinated Meat

Be sure to drain marinated meat thoroughly before adding to an oil-based fondue. If any leftover marinade liquid comes into contact with the hot oil, splattering may occur. For best results, drain the meat ½ hour before cooking the fondue, and use paper towels to pat dry.
