Basic Batter

This all-purpose batter can be used with meat, seafood, and vegetables.

INGREDIENTS | YIELDS 1¼ cups

  • 1 teaspoon baking soda
  • ½ teaspoon cayenne pepper
  • 1 cup flour
  • 1 cup soda water
  • 2 tablespoons vegetable oil
  • Freshly ground black pepper to taste
  1. Sift the baking soda into the flour. Stir in the vegetable oil, black pepper, and cayenne pepper.

  2. Slowly add the soda water until you have a batter similar in texture to pancake batter. Feel free to adjust the amount of water or flour to obtain the right consistency.

  3. Allow the batter to rest in the refrigerator for 30 minutes before using.
