Homemade Butterscotch Fondue

Stirring the mixture continuously once the butter and whipping cream are added keeps it from hardening into butterscotch candy.

INGREDIENTS | SERVES 6

  • 2 cups sugar
  • 2 tablespoons corn syrup
  • ½ cup water
  • ½ cup unsalted peanuts, chopped
  • 4 tablespoons butter
  • Marshmallows, fruit, or cake for dipping
  • ½ cup whipping cream
  1. Combine the sugar and water in a medium saucepan and cook on medium heat, stirring to dissolve the sugar.

  2. When the sugar is dissolved, turn up the heat and boil the mixture for at least 5 minutes, until the sugar turns a golden color.

  3. If the sugar has formed clumps, leave on medium heat and stir to melt the clumps. Once the butterscotch is evenly mixed, remove from the heat and immediately stir in the butter and the whipping cream. Stir vigorously to keep the mixture from hardening.

  4. Stir in the corn syrup and the chopped peanuts.

  5. Serve unheated in a bowl with the marshmallows, fruit, or cake for dipping.
