White Chocolate Raspberry Fondue
Serves 6
Look for a quality chocolate brand when shopping for white chocolate.
In a saucepan, mix sugar and water. Cook over medium heat, stirring, until sugar is dissolved and mixture begins to boil. Remove from heat and cool slightly. In a blender, combine sugar-water mixture with raspberries. Pulse to purée.
Combine white chocolate and cream in a saucepan over low heat. Warm, stirring constantly, until chocolate is melted and mixture is smooth. Pour raspberry purée through a strainer into the white chocolate mixture. Add Chambord and stir well.
Warm until white chocolate-raspberry mixture is hot. Pour into 1 or more fondue pots and place over heating source. Serve with chocolate pound cake cubes.
Chocolate by Any Other Name
White chocolate, sometimes called confectionery coating, is made from processed cocoa butter without the cocoa solids. Many aficionados and even regulatory agencies don't consider it a true chocolate. However, there's a big flavor difference between real cocoa butter-based white chocolate and white candy coating made with shortening and flavorings. Look for a product with a high cocoa butter content.
