Tri-Chocolate Fondue for Candy

Coats 15 dozen candies

1½ pounds white chocolate, finely chopped

1½ pounds semi-sweet or dark chocolate, finely chopped

1½ pounds milk chocolate, finely chopped

  • In the top of a double boiler, melt ½ pound of finely chopped white chocolate, stirring constantly. Add the remaining chocolate in 4 batches, waiting until chocolate is melted to add the next batch. Pour the chocolate into a glass bwl. As it begins to set around the edges, stir the set chocolate into the melted chocolate.

  • Repeat process with semi-sweet chocolate and with milk chocolate.

  • Pour different fondues into 3 fondue pots and place pots over heating elements on low settings. Allow chocolates to melt fully and begin dipping.

When making candy, buy the best chocolate you can find and treat it gently. To make things easier for guests, be sure to have small plates of shredded coconut, cocoa powder, confectioners' sugar, chopped nuts, and other coatings near each place so no one has to reach. Consider buying pretty foil-lined boxes or tins for guests to take home a sampling of the evening's handiwork.
