Chopped Salad

Serves 8

1 head Romaine lettuce, finely chopped

1 small head purple cabbage, trimmed and finely chopped

1½ cups carrots, chopped

1 yellow bell pepper, chopped

1 cup radishes, finely chopped

1 cup celery, finely chopped

1 cup black olives, chopped

1½ cups artichoke bottoms, chopped

1½ cups chickpeas

2 cups Cheddar-jack cheese, shredded

1 cup olive oil

⅔ cup balsamic vinegar

1 teaspoon Dijon mustard

1 clove garlic, pressed

¼ teaspoon oregano

Serve this colorful, layered salad in a large glass trifle dish or punch bowl for optimum effect.

  • In a large glass bowl, layer first ten ingredients.

  • Whisk together olive oil, balsamic vinegar, mustard, garlic, and oregano.

  • Drizzle dressing over salad just before serving.

Substantial Salads

To make this salad a main dish, simply add two more layers to the mix — one layer of diced chicken and one layer of diced ham or salami. Adding a sprinkle of chopped egg or crumbled bacon couldn't hurt.
