Apple and Rutabaga Salad

Serves 8

2 tart apples, peeled, cored, and chopped

2 large rutabagas, peeled and shredded

1 small sweet onion, finely chopped

1 cup raisins

6 strips bacon, cooked crisp

½ cup apple cider vinegar

2 tablespoons bacon drippings

⅔ cup vegetable oil

2 tablespoons sugar

1 tablespoon caraway seeds

4 cups baby lettuce mix

This classic German combination is simple, but packed with complex flavor.

  • In a serving bowl, combine apples, rutabagas, onion, and raisins. Crumble bacon over mixture and toss to combine.

  • Whisk together vinegar, bacon drippings, oil, sugar, and caraway seeds.

  • Pour dressing over salad, mix well, cover, and refrigerate until ready to serve.

  • To serve, line salad bowl with lettuces and mound apple and rutabaga mixture on top.

Getting to the Root

Root vegetables like parsnips, turnips, and rutabagas are sweet and crisp when eaten raw. Shred them into slaws and salads for a nutritional boost, in addition to extra flavor and texture.
