Ginger Lemongrass Hot Pot
Hot pot strainers or skewers can be used to simmer combinations of meats and veggies in this flavorful broth.
Combine chicken broth, lime slices, lemongrass, ginger, garlic, basil, and onion in a saucepan. Bring mixture to a boil, reduce heat, and simmer for 10 minutes.
Ladle broth into 1 or more hot pots or fondue pots and place over heating source.
Thread skewers with chicken breast cubes, turkey sausage, and button mushrooms. Have guests cook skewers in simmering broth.
Hot Pot Veggies
If you're skilled with chopsticks, heads of baby bok choy and chunks of eggplant or summer squash can be dropped into a hot pot and retrieved when tender. Otherwise, try strainers or slotted spoons.
