Bourbon and Butterscotch Fondue

Serves 6

2 cups sugar

⅔ cup water

1 tablespoon lemon juice

½ cup butter

1 cup heavy cream

¼ cup bourbon

Pound cake cubes

To make this without alcohol, increase the amount of cream and add a teaspoon of vanilla or rum extract.

  • In a large, heavy saucepan, combine sugar, water, and lemon juice. Cook over medium heat, stirring until sugar has dissolved. Increase heat to medium-high and cook, stirring often, until mixture is golden.

  • Remove pot from heat and carefully add butter. Stir in cream a little at a time. When cream is thoroughly blended, allow mixture to cool slightly. When fondue is no longer bubbling, stir in bourbon.

  • Transfer butterscotch mixture to 1 or more fondue pots and place over heating source. Serve with pound cake cubes.

Spirited Fondue

High-proof alcohol can be added to cheese and dessert fondues in small amounts. However, you should never substitute spirits for wine in a Bacchus fondue. At high temperatures, whisky and other spirits are inflammable.
