Stir-Fried Pattypan Squash

1 tablespoon dark sesame oil

2 tablespoons vegetable oil

2 cloves garlic, minced

½ teaspoon fresh ginger, minced

1 sweet onion, halved vertically and thinly sliced

3 dozen baby pattypan squash, halved vertically

3 tablespoons soy sauce or to taste

Salt and pepper to taste

2 tablespoons fresh cilantro, minced

Baby pattypan squash is available in most large supermarkets. It's a squat little summer squash with the flavor of zucchini. It's great in sautés, or toss whole squash in a little olive oil and throw it on the barbecue grill for a few minutes.

  • In a large, flat-bottom wok or Dutch oven, heat sesame and vegetable oils until hot but not smoking. Add garlic, ginger, and onion and sauté for 1 minute.

  • Add pattypan squash and sauté until squash is crisp-tender, about 3 to 5 minutes. Sprinkle with soy sauce and salt and pepper to taste. Add cilantro just before serving.
