Rosemary Roasted Chicken

Serves 6

1 chicken, about 3½ pounds

2 tablespoons olive oil

2 cloves garlic, pressed

1 tablespoon rosemary leaves

Salt and pepper

1 lemon, quartered

Sometimes a simple oven-roasted chicken is the most satisfying entrée you can prepare. For best flavor, buy fresh farm-raised chicken or additive-free chicken.

  • Wash chicken and pat dry. Remove giblets, if any. Coat chicken with olive oil and garlic.

  • Place chicken in an open roasting pan. Sprinkle with rosemary, salt, and pepper. Put quartered lemon inside chicken cavity. Roast at 350ºF for 1 hour. Remove from oven and let stand for 15 minutes before carving.

Safe Poultry Handling

Chicken and turkey should be cooked to an internal temperature of 180°F in order to kill any harmful bacteria that might be lurking in the raw meat. Never place raw poultry next to foods that will be consumed raw — like salad veggies and fruit. Always give utensils and platters that have come in contact with raw poultry a good wash with soap and water.
