Rosemary Roasted Chicken

Sometimes a simple oven-roasted chicken is the most satisfying entrée you can prepare. For best flavor, buy fresh farm-raised chicken or additive-free chicken.
Wash chicken and pat dry. Remove giblets, if any. Coat chicken with olive oil and garlic.
Place chicken in an open roasting pan. Sprinkle with rosemary, salt, and pepper. Put quartered lemon inside chicken cavity. Roast at 350ºF for 1 hour. Remove from oven and let stand for 15 minutes before carving.
Safe Poultry Handling
Chicken and turkey should be cooked to an internal temperature of 180°F in order to kill any harmful bacteria that might be lurking in the raw meat. Never place raw poultry next to foods that will be consumed raw — like salad veggies and fruit. Always give utensils and platters that have come in contact with raw poultry a good wash with soap and water.
