Green Apple Salad

This crunchy, refreshing salad makes a nice counterpoint to the rich foods normally served at breakfast or brunch.

INGREDIENTS | SERVES 8

  • 4 tart green apples, unpeeled
  • 1 seedless cucumber, unpeeled
  • 1 cup seedless green grapes
  • ½ cup fennel bulb, finely diced
  • ½ cup sultanas
  • ½ cup plain yogurt
  • ½ cup mayonnaise
  • 1 tablespoon orange zest
  • 2 teaspoons sugar or sugar substitute equivalent
  1. Core and dice apples. Trim ends off cucumber and cut into small cubes.

  2. In a bowl, toss together apples, cucumber, grapes, fennel, and sultanas.

  3. Whisk together yogurt, mayonnaise, orange zest, and sugar.

  4. Pour dressing over apple mixture and stir to coat.

Fennel Facts

Fennel looks a little like celery and can be used in place of celery in salads, stuffings, and other dishes. However, unlike somewhat bland celery, fennel has a pronounced licorice flavor. Most cooks are familiar with fennel seeds — which are available on any supermarket spice rack — but fresh fennel is worth trying.
