Chocolate Chip Marshmallow Fluff Cookie Sandwiches

Serves 12

½ cup butter, softened

1½ cups confectioners' sugar

1 7-ounce jar of marshmallow crème

24 large chocolate chip cookies

This dessert treat is both easy to make and portable. If you prefer, substitute oatmeal cookies for the chocolate chip cookies.

  • Combine butter and sugar in a bowl. With a mixer on medium speed, beat until creamy. Add marshmallow crème and beat until ingredients are well combined and fluffy.

  • Plave 12 cookes face up on a work surface. Drop a generous tablespoon of marshmallow mixture onto each cookie. Top with remaining 12 cookies to make sandwiches. Cover until ready to serve.

Hot Chocolate for a Crowd

Combine ¾ cup unsweetened cocoa powder with 1 cup sugar. Bring 3 quarts of milk to a simmer in a large pot. Stir two cups of hot milk into the cocoa mixture, then add the resulting paste to the pot. Stir until chocolate has dissolved in the milk. Ladle into 12 mugs and top with marshmallows. For adult palates, use dark chocolate cocoa powder or add a couple of tablespoons of instant coffee to the cocoa and sugar mix.
