Hummus

Serves 8

4 cups chickpeas, canned or cooked, drained

½ cup sesame tahini

¼ cup warm water

4 large cloves garlic

½ cup extra-virgin olive oil

Juice of 4 lemons

½ tablespoon cumin

2 tablespoons fresh parsley, chopped

Dash Tabasco

Salt and black pepper to taste

Don't be afraid to add an extra spritz of lemon or clove of garlic to this dish.

  • Combine chickpeas, tahini, water, and garlic in a food processor. Process with a metal blade until beans are chopped and mixture is blended.

  • With processor running, slowly pour olive oil through the top chute. Turn processor off, scrape sides of bowl. Add lemon juice, cumin, parsley, hot sauce, and a small amount of salt and pepper.

  • Pulse until mixture forms a smooth paste. Adjust seasonings to taste.
